Long time Dallas chef and restaurateur David Rathbun brings his 40 years of experience and love of these Texas culinary traditions to the fixed and weekly menus of The EVThing. At once familiar, his food defines new frontiers of deliciousness. For instance, reimagining LA’s legendary Philippe’s Original French Dip with a South of the Border inspired birria and a New Orleans Liedenheimer German/French roll gives birth to the Cuero Ribeye Dip, also known as “La Torta Mojada”, Spanish for “The Wet Sandwich”, is destined for greatness. Combine all of this with a platform of house-smoked meats, including brisket, pastrami, and turkey, and you have an explosion of tasty fare that will make the harshest critic smile.

One of the very first self-pour tap rooms in South Central Texas, The EVThing has a carefully curated selection of favorites as well as hard to find beers, meads, seltzers, and wines. Once you get your age validated, you are given a cup and a RFD bracelet to pour exactly what you want. Want to try a bunch before committing to a full pint? This is the best way to explore. For just 15 bucks, you can buy a, EVThing frosty mug to drink from and take home with you. Whenever you return, bring the mug with you and we will replace it with another frosty mug!

The EVThing features Annemarie Leslie’s Cuero Creamery creations, made with loving care a single gallon (8 pints) at a time. Annemarie took a home-based hobby making the most delicious and freezer resistant ice cream for her friends and family and translated that care to Gelato, which contains less fat and far less air than typical Ice Cream.
Using all natural ingredients, her Bourbon Butter Pecan is a hit any time of year. She generally has 13-14 flavors available including several seasonals, with flavors like Apple Cider, Cap’n Crunch, Strawberry Mint Chocolate Chip, Candy Cane, Sweetarts, and much more.
